Filipino Pineapple Pie - Pinoy Style

Filipino Style Pineapple Pie
Ingredients
Dough:
2 Cups All Purpose flour
1/4 Cup Powdered Milk
1 tsp Baking Powder
1/2 tsp Salt
1/4 Cup Sugar
1/4 Softened Butter
3/4 Cup Water + 1-2 TBSP
Filling:
4 Cups Pineapple Juice
1 Cup Sugar
1 Cup Crushed Pineapple
1 Cup Cornstarch
1/4 tsp Yellow food dye
Egg Wash (1 egg + 1 Tbsp water)
Directions:
1. Mix all dry ingredients well. Then add softened butter and half of the water. Mix until crumbly but holds together when squeezed (if necessary, add up to 3 tablespoons more water, 1 tablespoon at a time).
2. Add remaining water and mix well until you have soft smooth dough. Wrap with plastic wrap and chill for at least an hour.
3. In a large pot, combine all filling ingredients and mix well.
4. Turn on the heat to medium. Stir mixture continuously until becomes thick. Set aside.
5. Divide dough into 2 pieces. Flatten 1 piece on a floured surface enough to cover the bottom and sides of 8 x 8 square pan.
6. Pour pineapple filling and spread evenly.
7. Flatten the remaining dough piece just enough to cover the top of the pie. Seal the edges.
8. Poke some holes on top of the pie using a fork. Brush the top of the pie with egg wash.
9. Bake at 350F/180C for 30-40 minutes.
10. Let it cool completely before cutting it into a triangle shape
