Amateur chef here who does pretty well in the kitchen. This is my next task to tackle, I plan on flavoring the custard with a little Chambord liqueur and decorating with fresh raspberries!!

I know duff knows what he's doing and is my pastry idol, but I get the worst anxiety when he uses a piping bag cause he squeezes right in the middle instead of at the end

That looks amazing! But the caramel in the pot looks quite dark. I also wonder how is the hot tempereature maintained to have time to do all of the decorations, without getting the caramel to burning point. I tried making dry caramle once, and it was impossible not to burn it, until the all the sugar melted, it got also burned each time... :/ I hope wet caramel will work

You didn't make nougatine for the base, ;-)

I just watched a video of some french guy making this and he kept licking his fingers and coughing into his hands, it was absolutely disgusting and almost every comment was about that, Duff never licks his fingers or coughed into his hands..
