Heart Healthy Crumpets: This light & fluffy, heart healthy, high fibre, multi grain recipe includes choice ingredients like milk kefir (alternatives also provided) and sourdough discard lowering the lactose content and increasing protein content amongst numerous other nutritional benefits. Although it is a well known fact that the friendly bacteria in milk kefir and sourdough are destroyed when cooked, these ingredients are still beneficial for the reasons stated above and optimal for easy digestion and gut health. It can lower the risk of certain cancers, reduces cholesterol and lowers blood pressure. Heart Healthy Crumpets
Note: I’m using a blender
Ingredients
1/4 cup sourdough discard (I’m using Rye Flour in my starter)
1/3 cup old fashioned rolled oats
2 tablespoons crushed flax seeds
1/4 cup corn starch
1/3 cup all purpose flour
1 large ripe banana
2 extra large eggs
1/2 teaspoon salt
1/4 cup extra virgin olive oil (or melted butter)
2 teaspoons baking powder (if starter is not strong or for those who don’t have sourdough)
2 teaspoons honey or brown sugar if you prefer it sweeter (optional)
2/3 cup milk kefir-I’m using home made (or 1/3 cup milk or 1 cup buttermilk)
Extra #extra virgin olive oil for cooking (to brush skillet)
Method
Soak the oats in the milk kefir to soften and set aside. Alternatively, blend the oats in the blender before adding all the other ingredients and blend until well combined. Use a spatula to scrape the sides and blend again. Once a thick pourable batter is formed preheat a non stick skillet on medium heat and brush with olive oil. Pour a little bit of batter and once it starts bubbling, flip it over to cook the other side. Add these light and delicious crumpets to a serving platter and serve hot with your favourite toppings.
Serving suggestions:
I like serving it with whipped 0% fat Greek yoghurt and berries or a fresh fruit spread, also a great option if you have high cholesterol, diabetes or hypertension. Watch your serving portions. Having it plain is also a healthier, lower calorie option. Cut back sugar in the recipe if you’re adding a sweet topping. I normally stay away from overly sweet options but if you prefer it then enjoy with jams, marmalades, maple syrup and whipped fresh cream and fresh fruit. Store in an air tight container in the refrigerator and pop them into the toaster to reheat. They can be also frozen with parchment paper separating each one then seal in a freezer bag. Thaw at room temperature and pop them into the toaster at a low setting to warm up they’ll be just as good as fresh. As a savoury breakfast option serve with eggs, sausage or bacon and/or fruit.
Note: milk kefir can be found in the speciality section in the dairy isle of grocery stores in Canada 🇨🇦
