Too all the people saying the heat needs to be lower, the egg would stick to the stainless if the heat was lower. This is why he throws water in the beginning of the video to check heatThe problem is he does not have enough egg for the size of the pan.

The leidenfrost effect truly came in clutch with this one. The color and texture of both the inside and outside of the omelette looked really good.

After you get stainless up to Leidenfrost temp, you can actually lower the temp of your pan a bit and keep the nonstick effect. It's a bit tricky to work out the first... two dozen or so times, but once you got it you'll be way more skilled at things like eggs on stainless :D

When you notice the egg is cooking too fast you should take it off the heat and bring it back over the heat if needed. When you started to fold the egg onto itself you should’ve 100% been off the flame. Still looks great and I wouldn’t be mad if I paid for that plate 😂

I love stainless, it's like a sports car. heats up SUPER fast, cools down just as quickly. If you love micromanaging your food... stainless is unmatched lol

after you do the water test, just take it off the flame and add the egg.
you can always add more heat, but once its overcooked, its overcooked.

I think waiting for the Leidenfrost is way to high in temperature for eggs. You can put your eggs in before and still not get them sticked to the metal. Try (or use carbon steel that's even better for the omelette)

Slightly overdone but honestly, way better than I could do. I'd say take it off heat just a bit sooner, and you're golden 🤌

If you're cooking eggs on steel, use butter, not oil.
