Arguably the most popular item on Chinese Restaurants' Menus throughout T&T, Chinese-Style Fried Chicken is a definite crowd-pleaser in this Nation:

Yield: 4 Portions

INGREDIENTS

2 Leg & Thigh Quarters
1 Tbsp Minced Ginger
4 Tbsp Light Soy Sauce
3 Tbsp Rice Wine
1 Tbsp Sugar
½ Tsp 5 Spice Powder
1 ½ Tbsp Vegetable Oil
1 Tbsp Sesame Oil

About 3 Cup Vegetable Oil for Frying
2 Tbsp Chopped Chives for Garnish

METHOD

1. Place chicken quarters into a medium zip lock bag and place in the ginger, soy sauce, rice wine, sugar, and 5 spice powder.
2. Mix well and let marinate overnight for a minimum of 3 hours.
3. Place oil into a medium sauce pan to heat to 350 degrees Fahrenheit.
4. Meanwhile, remove chicken from bag and pat dry with napkins. Reserve soy marinade.
5. When oil is heated, place chicken quarters in and fry 5 minutes on each side.
6. Remove from hot oil and let drain on napkins and cool. Using a Chinese chopper, cut chicken into long vertical cuts across the bird and place pieces into a small serving platter.
7. Place a small sauté pan over high heat. Pour in the 1 ½ tbsp of vegetable oil and 1 tbsp sesame oil to heat. When extremely hot, pour this hot oil over the cut pieces.
8. Return the same hot pan to the high heat and add in the reserved marinade. Bring to a boil, cook for 1 minute and then drizzle this sauce over the chicken pieces. Garnish with chopped chives and serve.

Guys! I was going to make this but I still had a rotisserie breast in the fridge. Instead I sautéed ginger, garlic, red pepper flakes five spice in veggie oil and sesame oil. Added the chicken skin side down and left it for a minute. Turned it over and added soy sauce. It tasted so amazing! And I didn't fry it either!

I live in New York with my Dominican bf whom I wanted to taste little bit more of my Trini Style cooking. Unfortunately my mom doesn’t really know how to make certain dishes that I enjoy. After trying your bread recipe, I have followed so many others like your pepper shrimp, vegetable fried rice but I substituted quinoa mixed with brown rice and it was I made the macaroni pie and your bbq chicken with pineapple sauce. I love your cooking guys! You have reintroduced a little bit of Trinidad to my kitchen! I am going to try this recipe now.

I made this tonight! Very good, I seen they mentioned garlic but was not in the recipe so I added 4 cloves! Double everything because I made 6 thighs, yummy!
