Creeds are important for boiling down the fundamentals of what we believe into plain language. They help us understand what is faithfully written in Scripture alone, and help us spot false teachings. This may be why most of us were told to stay away from all this "old dusty useless stuff, no creed but Christ". Consider the source of those statements carefully. Most if not all of them were written in repsonse to heresies that were creeping into the church.
