Did you know that one of the most classic sauces in French cuisine, beurre blanc, was invented by accident? The most popular theory to the origin of the sauce suggests that it was invented in the early 20th century by chef Clémence Lefeuvre when she forgot to put the eggs into a Béarnaise sauce.

Today we’re learning from chef Daniel Rose of Le Coucou (NYC, One Michelin ⭐️), and just like the beurre blanc sauce, chef Daniel has an origin story that was dramatically accidental. He went to France for college and after he graduated, he wanted to stay longer but the only way was to get married or do more schooling. As he was already tired of doing homework, he joined the culinary school, and the rest is history.

The dish that chef Daniel is creating is called “Quenelles de Brochet” which is essentially pike mousse made with pike fillets, eggs, and cream blended well together(Brochet means pike in French). This dish is mentioned in the Michelin guide as being an “exThe blended mix is formed into quenelles or American football shapes and poached lightly. The quenelles are then drizzled with beurre blanc sauce (butter, shallots, vinegar and/or white wine such as Muscadet) and finally topped off with kaluga caviar from the Amur river between China and Russia which has been seasoned and aged in Paris.

The ultra transformed 'food', where the end product tastes nothing of the initial ingredient.. Not only does it not look, nor have the odeur of a fish, but we need to be reminded that it was a fish by the addition of another fish species's eggs(just to add to the final bill!)..
Yes children, this is sophistication on a plate.. Transformed Pike..
