How to make Kamut bread sticks

1.5 c warm water
1 T + 1/4 teaspoon active dry yeast
2T sugar
1/2 teaspoon French gray coarse salt
2 3/4 c white Kamut flour
1/2 c ( 1stick) butter
1. Combine water , yeast and sugar. Stir. Cover with plate and let sit for about 10 min , until foamy.
2. Mix salt and 2 3/4 cups flour. Stir water yeast mixture into flour . Knead for 3 min
3. oil bowl, cover with plastic let rise til double in size
4. When dough has doubled, melt butter and pour into half baking sheet
5. Turn dough out onto surface and knead a few times. Roll dough out about 8 inches wide and 16 inches long. Measure 1 inch strips across dough. Cut it in long strips with pizza cutter or knife, cut dough in half. The sticks will be 1x4 in.
6. Dip cut stick into butter twice. Place on another baking sheet and leave in same place to rise. Line up side by side til pan is full. Sprinkle bread sticks with garlic salt and Parmesan cheese. Let rise for 20min in warm draft free place.
7. Bake 350 for 18-20 min
