They're not actually tempering the chocolate though, which is why it looks so dull in colour and why it didnt set as fast as it would if you'd have tempered it following the proper temperatures. Although when you're going to sculpt it it doesn't matter as much however mixing chocolate types can also make your tempering just not work because of the crystals. It looks great though!

To temper dark chocolate: heat 2/3 of chocolate to 40 C and chop the remaining. Then stir the chopped chocolate into the melted chocolate until it reaches a temperature of 29 C. You may not need all the chocolate you chopped
