what version of Adobe Sign is this showing? Mine looks different in terms of adding and assigning signture fields. For me they are in a panel to the right and they look less "colourful".

yeah I assigned signature blocks to unique signers email addresses and sign in any order the signature blocks were color coded to each signers email address but when they opened it on their end it swapped them around and would only allow them to sign each others signature blocks. What now?

What if you need 2 signers and an approver and you don't know who the other signer is until the 1st person fills it in and signs it.
Business case:
Employee fills in a document and signs
Users Manager (identified as such by the employee on a field in the form) signs it
HR approves the document.
