Bacon Potato Corn Chowder Recipe - Glen And Friends Cooking

Ingredients:
3 slices bacon, chopped
1 red bell pepper, chopped
1 hot banana pepper, chopped
1 onion, chopped
750 mL (3 cups) corn
5 sprigs thyme
2.5 mL (½ tsp) tarragon
5 mL (1 tsp) summer savoury
Salt and pepper to taste
750 mL (3 cups) chicken broth
2-3 potatoes, peeled and diced
Beurre manié to thicken
250 mL (1 cup) or so heavy cream

Method:
In a heavy bottomed pot, brown the bacon.
Then stir in the peppers, onion, and corn; continue frying until the onion has softened.
Stir in the herbs, chicken broth, and potatoes; cover and simmer until potatoes are fork tender.
Use a potato masher or blender to smooth out / thicken part of the soup.
Stir in 1-2 Tbsp Beurre manié to help thicken (if desired).
Stir in the cream, cover and cook on a low simmer 20-30 minutes.

I grew up on chowder made with canned milk and when I started making my own I switched to heavy cream because I thought that was more sophisticated somehow. But my tastes weren't more sophisticated so I went back to canned milk and I'm all the better for it 😉

I love how you promote cooking as a method, and not a strict recipe. That never dawned on me until I started working as a line cook, and most people don't seem to understand it but that's exactly how you should do things at home.

Brings great memories growing up in the 70's and early 80's. Didn't have much but chowders like this kept home as home. And easy to stretch if unexpected company came by. Thanks for sharing🤠👍👍👍

In a soup I have made, I toasted the frozen corn on a sheet pan in the broiler before adding it to the soup.

Mmm, Summer Savory is such a good ingredient for soups and stews, really uncommon these days, too. I try to keep some on hand to use on some old family recipes, but it's ridiculously hard to find in stores down here in the States where I live. I usually have to special order it online to get more.

This was a summer meal growing up, used a bit of salt pork instead of bacon and fresh picked corn and potatoes. I add whatever other veggies I have and make it a veggie chowder, carrots, green beans, celery and peas are all things I've thrown in.
