I love all the Studio Ghibli films. Kiki's is awesome. Nausicaa, Porko, Castle in the Sky, Pom Poko, Tales from Earthsea are all amazing. In the very tip, tippy, top tier (for me anyway) you have Princess Mononoke, My Neighbor Totoro, Spirited Away, and Howl's Moving Castle. Then of course when you need your soul completely crushed and weep while watching a cartoon, Grave of the Fireflies.

All of that top tier are must see. Princess Mononoke, Howl's Moving Castle, My Neighbor Totoro, Spirited Away, and Grave of the Fireflies are all beautiful, impactful, and touching.
If I were you I might start at My Neighbor Totoro if you want something skewed a bit younger, Princess Mononoke if you want something fantasy/action oriented, or Grave of the Fireflies if you want to die inside. I'd save Howl's moving Castle to make sure you like the others first. It may be my personal favorite, but if you aren't into the other Ghibli films you probably won't care for it.
