Some of what you guys call struggle meals are total luxury. My real struggle meal was when I ate RICE (cooked with oil n salt only) and ONION (cooked separate) for 2 WEEKS

I think I'm struggling with the definition now, back in uni during difficult periods I would just have a big bowl of cooked rice with ketchup and that's what I would consider a struggle meal, all these recipes look super fancy in comparison

When I was struggling I ate potatoes (and only potatoes) pretty much every day.

I figured out a few things I enjoyed with spices but my favorite was always:

1. Cut potatoes into rectangles like fries... don't peel them, waste of food.
2. Boil for about 20 minutes.
3. Fry them in a pan with a little bit of oil (I use olive oil). Not a lot just the bare minimum to make the potatoes crisp up.
4. Add salt and cajun seasoning.
5. Add tabasco sauce. It doesn't take much to add a ton of flavor and a kick to them. Just enough to coat the potatoes.
6. Fry until there is not much sauce/oil left. The tabasco cause when frying may make your eyes sting a bit, it is a hot sauce after all.

Simple, and the extra stuff used vs just boiled potatoes didn't cost much and lasted a long time when used sparingly.

Nice and crispy spicy "fries"

Tastes good without the tabasco sauce too but then it's just basic potatoes.
