I made this for my husband and it became one of his favorite dishes! I didn't have peas so I used some spinach instead.

Soborodon is fantastic, it's one of my weekly go-to meals.
I usually just do it with ground pork with a 1:1:1:1 ratio of soy sauce/mirin/sake/sugar with plenty of oroshi ginger and garlic and lay either some komatsuna/baby bok choy/other green veg on top.
I normally don't buy eggs or eat them really, but I'd be interested in trying it out.
