Coconut milk Pulao | Thengai Paal Pulao.. A Pulao with a very delicate taste but rich at the same time. What I love is the beautiful fragrance of the Pulao.

🪴 Soak 1 cup Basmati Rice while you cut the vegetables.
🪴 In a pressure cooker add 2 tbsp oil and 1 tbsp ghee. Add whole spices and allow to splutter.
🪴 Add sliced onions, green chillies and sauté till pink.
🪴 Add ginger garlic paste and sauté on
Low flame till the raw smell goes away. The onions should not take on any colour.
🪴 Now add chopped vegetables ( I have used 🥕, French beans and peas ) and salt. Sauté.
🪴 Now add the soaked drained rice. Sauté gently without breaking the grains.
🪴 Add coconut milk plus water. The ratio is 1 cup rice : 1.5 cups liquid. I have used 1 cup coconut milk and 1/2 cup water to make 1.5 cups liquid. Add coriander leaves, mix well. Cover and allow to come to a boil.
🪴 Once bubbling, cover the cooker and allow two whistles on high flame. Turn off the cooker and allow to depressurise naturally.
🪴 Open and fluff gently. Allow to rest for 5 mins before serving.
