in philippines we call that chicken afritada but with red bell pepper and chicken liver. but we have many variations too in addition. some add green peas, pineapple, raisins, hotdogs, pickle relish

As someone who's opening a home restaurant based on Asian food, I'm too scared to attempt fusion unless someone Asian is walking me through it. The last thing I want is to disrespect someone's culture. But if it's an approved fusion, so to speak, and I can intelligently explain the history of the dish, that makes me feel much more comfortable about making it.
