For Jeana about the souffle not rising:

I work at Panera Bread and we have souffles in the morning and every time we put them in they get steamed for about 25 sec then bake at 360 degrees for 21 min. Hope this helped! (:

In order to make your recipe rise or be "fluffy", you should place a piece of cloth over it cause the temperature will get warmer and the recipe with suck the warmth in. I learned this from my mom by the way:) Hope you found this helpful and hope you had a great christmas and also a happy new year!
