There is another traditional way of doing it
By just breaking the coconut in half using a knife and using a coconut scraper that's how we do it in our house usually but you way is also good

I am a Filipino and we use mutated wood chairs.
We use that chair you would use that is made of 3 wood blocks and nail them together.
The attach a metal thing at the front (I don't remember) them cut the coconut in half then get one piece and then rub the coconut onto the metal thing in an arc shape and repeat on the other half.

If you use a honing steel to poke a hole in the coconut like he has, MAKE SURE to clean off the steel. Either a wet towel or scrub down the entire thing. If you do not, small metal fragments could end up in your coconut, causing irritation of the mouth and throat.

I break the coconut in half and use a coconut grater.
My grandmother uses the good all traditional coconut grater

You can try to make Klepon (Kuih Onde-Onde) if you haven't yet, if I remember correctly people also use that ingredient to make it

tip: there's always that one sharp vertical line in every coconut, if you smash the middle of that line you will get a very clean cut of the coconut most of the time. In my place we have a specific type of grater used specifically for coconuts to get the most of the meat, but scooping it is a great way too!

I have a suggestion: After you scrape and shred the meat, put it in a cheesecloth and submerge it in a warm water equal to its volume then squeeze the coconut milk out of it. Then with the coconut milk, boil it with equal parts sugar until it reduces into a caramel consistency then voila! You have coconut jam which is a sweet and rich spread to toast and glutinous rice with toasted sesame seeds if you wanna go Asian.

Instead of smashing the coconut on concrete, use a heavy machete.
Place the coconut on top of your palm and hold it firmly. Crack open the coconut by striking it with the machete and rotating the coconut with each strike (to get even halves).

And here in Kerala, we have coconut scrapers in our households, used to shred coconut quite easily.

Or buy pre-made coconut shreds. Love me some coconut sometimes, but opening the shell and extracting the flesh is such a hustle, so I don’t buy them often.
