Today is a special day, because @seezur is here to share his love letter to a generous slice of pie at a late-night diner. His version uses homemade coconut milk and homemade pistachio butter—both whipped up in a Vitamix—which give this pie a color and consistency that store-bought just can’t buy.

Just when I thought I had all the kitchen gears I needed, you pull out that whipped cream thingy. Besides looking for one of those, I’m going to start searching for a coconut.

This is the first time I have watched your channel, and enjoyed it. Thank you. BUT. Whoever does your filming needs to be reminded this is essentially a BAKING show. For Exmple: If you are verbally describing how to shape a bottom shortbread cookie crust, the camera should be on the CRUST, not ON YOU!! We never did see how you made the crust. We do not really care how your face looks when you speak if your hands are doing something important to the recipe! Hubby grumbles about this same thing when he is watching car-related videos. The presenter is ON CAMERA for 45 seconds explaining about how nice or exotic or technical something is, but we NEVER SEE IT! Please, keep this in mind. A baking show is about baking--not your face (which IS cute, but that is beside the point!).

Could you heat up the coconut water and substitute it for the tap water?

Why not coco oil instead of butter?

Sorry, great recipe but way over the top on pushing the Vitamix that was actually ridiculous. Most of us don’t have one and won’t buy one so I’ll try this with a blender. Oh, and I use a different brand of salt because, it’s salt. What matters is the form/texture.
