The funny thing about the time stop and "the plot lets him do whatever he wants" is that it literally happens in GOW Ragnarok. Heimdall has the power to slow down time to the point it's essentially stopped, but Kratos is still somehow capable of dodging his attacks during this state.

The thing about keeping the stand as his servant has actually happened, sort of. In Chains of Olympus Kratos fights the Persian King who commands the Efreet (which is basically Magician's Red) and after Kratos kills him, he takes the Efreet for himself.
