For large farms it just becomes crazy fast. I wouldn't be against a new, expansive Redstone item/contraption that can handle huge amounts of items coming in and going out.

How would you make a item sorter with this?

The easiest way to sort items at this rate would be water streams. I usually just spam the normal item sorter with 3 dust for overflow protection and run water over it, using a packed ice block between each 8 block section. In the nether you could replace this with a slime block pusher. Or if you want to be super lazy (like me), have the items pushed into a nether portal where they fall into a water stream.

For each 9, 000 items/hour of a certain type, you need 1 hopper item sorter. So if your farm generated 25, 000 bones, 12, 000 string, and 6, 000 spider eyes per hour, you would need 3 bone sorters, 2 string sorters, and 1 spider eye sorter.

Note- this system will not catch 100% of the items because farms are never completely consistent with the rate they give items. Meaning that occasionally, the item filters will be full of a given item and won't pick the item from the stream. This can be fixed by making the water stream loop back to the beginning, but will make a veeeery minimal difference on the actual output.

This is actually a good build! I found out minion lumberjack (minion plugin) is exploitable on my fav server. It drops about 5-7 stacks woods every 10 sec. Gonna try building this!
