Regular charcoal can filter water as well due to how porous it is. Great example are aquarium filters. It will not have the metallic sound like this charcoal, which is honestly really cool, bit it can still do the job when needed.

This type of charcoal wasn't for grilling and BBQs. It's for blacksmithing. Traditional blacksmiths in Japan prefer this charcoal over any other to forge a high quality katana. Just like how traditional blacksmith in the US prefer to use mined coal or some people called it as "coke" over charcoal and gas.

I mean, just go pretty much any Australian hardwood. They're all very hard in comparison to most japanese native trees, iron bark in itself is ludicrously hard and is disliked by sawmills with HSS saws.

Most Australian hard wood makes brilliant charcoal, its all dependant on the quality of the charcoal coking setup.

We make these kind of charcoal in kenya and dont even think too much about it ... if its the metal sound, long burning, no smoke or odour ... yeah .. we do that ...

I made this kind of charcoal once. I used a different kind of wood, but the sound brought me back to those memories of the project lol. I used turmeric powder in water to test if it was able to purify the water and it took most of the orange color out.
