Fiddlehead ferns.

Curled fronds of a very young fern. Spring treat with a short window of availability.

It’s important for foraged fiddleheads to be cleaned and cooked well. Fiddleheads should be green with little to no brown skin.
If your fiddleheads are mostly brown they’re starting to turn and shouldn’t be eaten.
Begin by trimming the center of the fern to make cleaning easier, and snip off the bottom of the stem.

In a pot of boiling salted water, boil fiddleheads for 5 minutes. Plunge Into an ice bath to stop the cooking. At this point you can sauté, grill, or roast your fiddleheads any way you see fit :)

That ferny part he cut off with the dirt is actually delicious, it traps all the garlicy buttery sauce. But the chance of dirt is moderate. And youre spot on with the fish pairing. When fiddle heads are coming out, lobster season is also starting. Amazing 🤌

If you tumble them in a cylinder grate it cleans them up then you just rinse them!!
