Nice job. Pro tip: make small incisions along the periosteal connections between the bone & beef connection before cooking during acclimation phase. This allows for the heat to reach in between without overcooking. Also assists in the carving after resting.

This is a great cut and a perfect cook, but I tend to not get anything with bone in it because you get less meat for the same weight and price as something without a bone

The knife is nice, quite good actually. It has a nice shape, and the handle is very nice. It is also clearly sharp. The image on the side of the blade adds a nice touch.
