I really dont have any strong Tech background, and this stable diffusion thing is kinda confusing... Some say it used for language, some say it used for construction... All I can process now, stable diffusion = minecraft, models = mods, UI = launcher... So what I can understand from your video, you have the most mods out of any tutorial video guy and using weird launcher...
