Looking for a healthy meal to enjoy for breakfast lunch or dinner. This sweet potato Buddha bowl is it.
It's paired with savory beans, kale, and avocado.
Air fry sweet potato.
Stab a large sweet potato with a fork then wrap on foil cook at 390 for 40-54 mins. Cut into chunks
Tahini dressing
1 Tbs water
1 Tbs lemon juice
1 Tbs agave
2 TBS tahini
Add a little water to thin it out
Buffalo sauce
1/4 cup hot sauce 2 TBS melted butter
Or you can just use hot sauce.
Beans
1 can of beans
1/2 diced yellow onion
2 TBS sofrito
1 tsp cumin
Kale
Add 1 bunch of kale to a skillet and add 1/2 C water sprinkle some salt and crushed red pepper flakes. Put on lid and let simmer for about 10 minutes. Let water evaporate until it's bright green if you may need to add a little more water if it evaporates too fast.
