Banh mi chopped salad is the new best thing

📌 Fresh Banh Mi Chopped Salad
Calories: 282 calories

*These calories are without the bread
Ingredients for my portion (feel free to adjust to suit your calories):
200g raw lemongrass chicken thigh (check out my previous video on how to make this)
60g lettuce
40g cucumber
40g carrots
20g red onion
5g spring onion
5g coriander
15g Hellman's light mayo
5g Knorr's liquid seasoning (Maggi's original seasoning sauce works too)
Salt and pepper to taste
(Optional) Toasted bread/roll, or low carb crackers would pair really well with this
Method:
1. Cook the lemongrass chicken, and wash and prep all the ingredients you're going to use.
2. Place all the ingredients on a chopping board and chop until all ingredients are finely chopped and combined.
3. If you have the calories, toast up some bread or a roll. This pairs really well as it's pretty much a homemade easy banh mi! Otherwise, if you want something lower calorie, cruskits, low carb bread, or crackers also pair well. Or just eat it by itself 🙂
