I started carnivore and a 16/8 hour eating window in September 2020 and lost 18kgs by November and then stalled, so I cut my fat intake and upped my protein and also started having a small amount of carbs at night after dinner, and my weight loss and muscle gains have taken off again. I also still had cravings for shitty food while on carnivore yet when I cut my fat and introduced small amount of carbs at night my cravings went away completely

I self diagnosed myself as insulin resistant based on some blood tests and symptoms. Narcolpetic energy drops after eating. I was mainly vegetarian going on plant based for most of my life, 20+ years, but I ate a lot of carbs and sugars and I was always as skinny as anything.

When I switched the emphasis and started to eat more meat and fat I started to gain muscle from activity which I hadn't done before, I lost my visceral fat (though small) bloated belly and started to see a more even distribution of fat around my body. If I recall rightly the Atkins diet or something similar back in the 90s recommended partitioning the foods you ate. Don't eat this with that etc.

I still think refined carbs have a lot to answer for.

Thank you for explaining these things so well. I'm reading your book and now when doctor talks fast while discussing my cholesterol, insulin, ketones, or protein intake on Keto/IF/prolonged fasting, she won't get away with talking to me like I'm an idiot and saying "if that makes any sense' with a condescending smile.

I found carnivore to be the easiest diet to follow as it is the only way of eating for me that reduces my junk food and alcohol cravings to a manageable level.

This is what works for me. Eat once a day, clean unprocessed food, lots of it. Get a good workout everyday.

It looks like Siim just missed the point. It's not insulin that makes you fat, its insulin resistance. Japanese and Chinese eat more carbs than people in the west countries, but they consume one or two meals per day, with dinner being usually the biggest meal (loaded with rice and noodles). Mind that it is actually changing in Asia and their population is starting to get fat quickly as they adopting western style eating habits. In the west people eat 3-4 main meals plus snacks all the time. It makes them insulin resistance and fattier day by day. Keto is the best way to drop weight quick, clean your liver and restore natural insulin responses in your body. After that there is nothing wrong with having carbs in some of your meals, if you don't mind that this stuff is actually addictive.

the problem I think lies in carb tolerance. overweight and type 2 diabetes people cant handle carbs due to severe hyperinsulinemia for years eating excess carbs and not expending their glycogen stores, which in combination with high calories promotes weight gain. However if you are a normal individual eating carbs, then you are fine until a certain point, any more than that will lead you to weight gain. the good thing about low carb is that it makes you insulin sensitive and also helps get fat adapted so that you can use both ketones and glycogen stores interchangely(although the body can create glucose even if you dont ingest carbs via gluconeogenesis). calories at the end matter but it also depends on mixture of the macros. eating 2000 calories of carbs and 2000 calories of fat dont trigger the same response in the body..

No, carbs don't necessarily make you fat but I'd be willing to bet money that >90% of obese people are consuming diets absolutely loaded with them though.
Maybe it's just good genetics, but I can eat a medium to high carb diet using a basic 'calories in vs calories out' method and lose body fat, I just happen to find that keto speeds up the whole process and also makes me feel more satiated and generally better.

Excellent vid! I’m glad to hear you speak up on this issue. This is actually one of the best videos describing why it truly isn’t carbs that make you fat. This issue is so complex and most Youtuber don’t have the knowledge base, and patience, to go into all the details. And many viewers are too impatient and want “simple” answers to everything (I.e. carbs make you fat.)

There are some other issues that contain similar complexities. For example, how quickly the body can go into burning primarily fat without being in keratosis. Some People think you HAVE to be in kerosine to burn fat. That’s simply not true.

Also, people don’t realize that just because you’re fasting it doesn’t mean your body is in a “fasted state.” If you eat a large meal of red meat it can take your body 12 hours, or more to digest it. Your last meal totally effects when your body starts to dip into stored energy.

What if you eat high carb meal for dinner and higher fat meal for lunch, is this classed as combining Fat and Carbs?

The one thing you left out is the frequency of eating. If you want to reset you base weight, Intermittent fasting reduces insulin to 0 and puts your body in ketosis, a fat burning state. 10% of westerners eat 3 meals a day, 80% eat more meals and the other 10% eat 20+ times a day. Satiation is related, but deliberate breaks with food insures any diet work, according to Dr. Fung

That's exactly what I concluded, a few years ago ... I was tired of the controversial nonsense of various experts and decided to study myself. My ancestors lived in the wilage, and eaten seasonally. They are eate, in most cases, vegetables with little animal (up to 5%) protein. And they had a high rate of long-living peaple. They did not have access to refined foods (flour, fats, oils, sugar) ...

Congratulations Siim. That was probably the best 8 minute synopsis of the "diet wars" that I have seen.

However, I do think that the title of the video could also be restated as:
"Why the Carbohydrate Insulin Hypothesis of Hyperinsulinemia is pretty much true."

I also disagree a bit about your position to discredit the "zealots" or "purists" who condense the message down into the simple "carbs make you fat" line. The scientific "truth" is out there for those who do want to find it. However, I have seen countless posts from people either unable or unwilling to find/read/understand the science and instead say "I don't care. Just tell me what to eat." After reading such posts for years, I am convinced that this is why Dr. Atkins ended up just saying things like "Eat as much meat, fish, and eggs as you want." Similarly, I also think that authors like Taubes and Fung may take some liberties in order to communicate this ultra complex message into a more understandable and actionable program.
