Ingredients:
2 tbsp olive oil
1 small onion
3 garlic cloves
1 cup artichoke hearts, defrosted
2 cups baby spinach, packed
Salt & Pepper to taste
1 tsp red pepper flakes
1 tbsp all purpose flour
3 cups whole milk
2 cups cooked pasta (1.5 cups dry pasta, 3 cups water, 1 tsp salt, 1 tsp oil)
1/2 cup parmesan cheese

Method:
1. Cook dry pasta along with water, oil and salt until aldente in a heavy bottom pot or in IP for 3 mins and release pressure thereafter.
2. In a heavy bottom wok/pan add oil, garlic, onion and saute until translucent.
3. Add artichoke hearts, spinach, salt, pepper, red pepper flakes and saute until spinach wilts.
4. Add flour, roast for a min, add milk and combine well. Once the sauce thickens, add cooked pasta and combine well.
5. Top it off with parmesan cheese and serve hot.
