I just love the way you cook! I'd been a professional chef for 25+ years. You cook just the way I do! I recently got out of the restaurant business because too many drunks and other potent drugs, low wages, way too long hours if on salary, too many kids on their cell phones all day, and just not enough appreciation for the skill of making fine food. You are not 'old school" you are fine school! Watching your videos keeps me connected with what I loved about being a chef. Thanks, Julie West

I’m trying to convince my friend to salt and pepper the chicken before flour/egg/breadcrumb coating.
How did that chicken not stick as soon as you put it in the pan? Most videos tell you to let the chicken sit, untouched, till it browns on the bottom, or you’ll tear the chicken.

Looks delicious. I just sat down as my Seasoned and Skillet Browned Pork Cutlets finish off in the oven. I had a taste for them tonight. My fresh mixed salad is ready with a homemade Western Dressing waiting to top it. All being served with Butter Beans and Potatoes Au gratin. Salute`

I just so happen to make this at work today for the first time, but I put a non-seafood cioppino sauce on top, tasty.
