After doing some research here's what I have come up with:
I haven't seen you guys using this a lot, but you can dry mud on dripstone blocks to get clay blocks. (They would be useful for terra-forming and etc.) (You can also break these clay blocks with your fists to get clay balls, for the museum)
You should also create a raid farm to give you access to banners and totems.
Another cool farm would be a cat gift farm. By putting tons of cats in boats and then sleeping every single cat will give you a gift, the new items you could get would be phantom membranes, rabbit's foot, and rabbit's hide. (Mostly for the museum)
While you can't brew potions, (No brewing stand) you could get at-least 4 potions. Fire resistance, Water Breathing, Swiftness, and Potion of healing. The first two you could get would be possible by setting a witch on fire, or drowning a witch, and then killing them when they are drinking the potion. The other 2 will be gotten through just generally fighting a witch.
List of new items: Clay, Clay balls, banners, totems, phantom membranes, rabbit's foot, rabbit's hide, Fire res, water breathing, swiftness, and pot of healing.

Why stop at 500 days, I say do a 1000 days. Or how ever long it'll take to finish the museum with all of the items. That was cool to watch, and interesting to learn how you met hobby. Props to him for starting an awesome series.
