How do Demulsifier additives break oil/water emulsions?

Water in oil emulsions can play havoc with industrial lubrication systems. Demulsifiers can assist in breaking these emulsions and helping water to separate from the oil. In this video we explain what makes emulsions stable, and how additive chemistries can help to destabilise them.

Very helpful video! Just want to mention that, mayonnaise is actually an oil-in-water emulsion, where oil droplets are dispersed by a continuous water phase. It may seem counterintuitive because there is way more oil than water in mayonnaise.

Will only adjusting ph to neutral be enough to Demulsifie?
