Learn how to make your own vegan katsu curry sauce and create a delicious tofu katsu curry dish with this step-by-step tutorial. Perfect for vegans and non-vegans alike, this recipe is a must-try for any curry lover!

Katsu curry is a popular Japanese dish that has been enjoyed for over a century. It traditionally consists of breaded and deep-fried meat or vegetables served with a rich curry sauce and rice. In recent years, with the rise of veganism, there has been an increased demand for vegan-friendly options of this delicious dish.

To make katsu curry more vegan-friendly, traditional meat cutlets are replaced with vegetables such as eggplant, tofu, or mushroom. These vegetables are sliced, coated in breadcrumbs, and then deep-fried until crispy. Alternatively, seitan or soy-based meat substitutes can also be used.

The curry sauce is usually made with a vegetable-based broth and a blend of fragrant spices, including turmeric and ginger. Instead of using animal-based stock, vegetable stock or coconut milk can be used to create a rich and flavorful sauce. To enhance the umami flavor of the sauce, vegan-friendly ingredients like miso paste or soy sauce can also be added.

To serve, vegan katsu curry is typically accompanied by a side of rice.

One of the great things about vegan katsu curry is its versatility. It can be adapted to suit different tastes and dietary requirements, making it a perfect dish for those who follow a vegan, vegetarian, or gluten-free diet. Additionally, katsu curry is an excellent way to incorporate more plant-based protein into your diet, as vegetables and meat substitutes are excellent sources of protein.

mmm this looks so delicious! Don't forget to put a dash of black pepper, so it increases your tumeric absorption. Great tip with the one hand wet and one hand dry, less messy that way I guess. Also loving the corn starch slurry, such a great idea to increase crunch factor. Def going to try this one!
