I’ve been using mesh trays for years - anything from pizza to desserts. Nothing gets soggy on the bottom because of the mesh. They’re cheap and last a long time. If you can’t find them, go to a restaurant supply store.

I’m telling yall once you learn how to do pizza dough, it’s over for your take out spot. It’s so simple, seriously! Dont be overwhelmed because it’s dough. Pizza dough is super forgiving. As you get better at working with the dough, you can mess with the hydration percentages and get some really crazy at home results. I’m talking like restaurant quality pizza, at home for less than 10 bucks. It’s amazing.
