I see it differently. The tapered object is actually going downhill because the tapered surfaces go from high to low, "downhill."

Actually. It's all things move with the path of least resistance, unless an external force is used against it, which then forces it to move to another path of least resistance.

Have nothing to with center of mass. There identical for both. Its just the shape that change in what direction its goes down.

Center of mass yes but your taper just creates a slope on a perpendicular axis to the "downhill slope"

The wooden track is in the shape of a V, and the second roller is tapered. As it moves to the left the track gets wider and the tapered roller sinks lower and lower. It has nothing to do with the notch being lower than the center of mass, this trick would still work if nobody carved the notch lol. If you elevate the left of the V track higher so that it has a steeper slope, then the second tapered roller wouldn't roll to the left.
