You're absolutely correct. Wa 和 means Japan (ancient name for the country) and gyu 牛 means cow. It's the exact same reason Korean beef is hanwoo 한우. Kobe is one of the prefectures that has award-winning wagyu beef producers. And, as you stated, there are levels of wagyu, with A5 being the best of the categories. I've had a Wagyu Burger before with homemade sauce and vegetables and it was easily the best Burger I've had. We made 2, one with a wagyu patty and one with another patty and you could immediately tell the difference, it was so juicy. Ill visit Japan soon and I'm really excited to try a genuine Wagyu steak to see how it compares.

General idea for wagyu beef is that it refers to ALL japanese cattle. With grades differed by Letter and number (e.g. “A5”) which indicate yield and general quality.

Kobe beef typically means cattle from the region of kobe and it could range anywhere on the grading scale. And is no longer the “number 1” beef in japan. That now belongs to miyazaki

Made a wagyu burger first time on my barbecue grill last week. Kept it simple with cheese, a little mustard and ketchup. Best burger ever
