I lived in Lima for many years, and causa was one of my favorites. It is truly refreshing and delicious! And this recipe is perfect! One small bit of advice: the jarred aji amarillo goes bad fairly quickly after the jar is opened. Because I live in Canada, and find it hard to get, I freeze it into cubes and that way, it lasts forever.

Peruvian food is very unrated and it’s delicious. In my old job, I had many Peruvian coworkers and I always looked forward to the holiday season when we had a celebration with many yummy Peruvian foods. This brought back many good memories! Thanks for sharing Chef John!

I visited Peru this last spring break and ate plenty of Causas. Yours looks amazing Chef John. Peru is a hidden jewel in South America. It is a foodie refuge. The cuisine down there is spectacular.

OH MY chef John made a peruvian recipe!!! As a fellow peruvian I can say it turned out great!! Everyone has to try it out, its actually delicious and super simple.
Btw you should try other peruvian recipes, I'm sure we'll all like it :D

Causa is delicious and this looks like a spot-on recipe. My wife is Peruvian and she's made this for me numerous times. I'm going to make this for her and see what her reaction is. Aji and lime are the key ingredients to many Peruvian dishes. Peruvian food is unique and delicious. Heading down to Peru in two weeks to experience some more great cuisine. Thanks for posting this!

GREAT. Yes, we Peruvians love our causa. At the beginning I used the aji paste but found that it was a bit hot in a dish that is not supposed to be hot at all. Now I used aji pepper from the frozen section that comes in pieces without the center. You can even blanche it a couple of times with milk to take most of the heat out. Peruvian food is based on the flavors of the Peruvian chili peppers.

Causa is fantastic!!! Lomo saltado, aji de gallina, etc. I live in Chile, but adore peruvian cuisine, it is fantastic.👏👏👏❤️👍🌷. I also make causa with shrimp, instead of chicken, and always with avocado. Yummy!!!

Thank you for sharing this dish.
As a Peruvian I must say this is spot on!
The other two known variants of this dish are the one with tuna filling instead of chicken and the sea food variant, which is called "Causa del Abuelo" or "Grandpa's Causa" which has crab+lobster+shellfish filling and is topped with a bit of ceviche on the top.

I have never tried Peruvian cuisine. Seeing this has shown me that I have been missing out. Thanks for expanding our culinary world chef, not just our guts ;)
