This is just a wild suggestion, I still need to test that out, but as it seems to me those limits are only there due to the app and website's "date picker" themselves. If you catch and manually edit the post request, you should technically be able to go all the way up to the data type limit! (Assuming they are using standard SQL Datetime, that's usually around 31st December 9999).

Edit: It actually works! I now have a video scheduled on 31.12.9999, which is safe to say the furthest scheduled ahead video on youtube! Sadly, however, the premiere feature uses a different data type which only allows dates up to 2023 (yes, before the max date you can choose in the youtube studio itself!), meaning I cannot share a premiere link (yet).
I have contacted youtube about this and hope for a reply. If I do get one I will edit my comment once more.

When changing date of upload on mobile you can press the small text that says the year and scroll to 2100 in a couple of seconds.
