I've researched "a lot" of sources on healthy diets and I find your approach to come across very fact-based and unbiased. Great work! Can I ask, how long ago were grains, and also processed grains, introduced into our diets? It seems like we've been eating rice in the East and wheat in the West for a long time. Was it always a bad choice?

Avoid highly processed grains as well as other poor food choices. Grains turn into glucose or stored as fat. Neither are good. The fiber is easily substituted.
