Taking a Formula Ford for a spin at Sydney Motorsport Park

We finally get a chance to drive a Formula Ford race car with Anglo Racing Academy. This was our 1st time driving an open-wheel race car and it blew us away. I want to drive one of these at the track next year when Covid restriction lockdown ends. Question: Do you need to change gears or can you leave it in one gear for the whole time?
I vaguely remember someone telling me I can leave it in one gear & I don’t need to change it. Was he right? Any information would be greatly appreciated. Thanks in advance
