Season 1 Episode 5 

Ingredients:
-3l bucket
-too many udon noodles 

Dashi:
-1500ml water
-30g Kombu
-30g bonito flakes

Soup: 
-150ml soy sauce
-100ml mirin 
-50ml sake
-season with salt to taste

Toppings:
-fried egg
-green onions
-seaweed
-hot sauce 

Instructions:

Put kombu seaweed in water and bring to a boil. When the water boils, remove the kombu and turn off the heat. Now add Bonito flakes and simmer for 2 minutes. Then filter everything through a sieve. Mix soy sauce, mirin and sake. Add into your dashi. Season with salt to taste.

Prepare the udon noodles according to package directions.

Serving: Add the final soup into the bowl. The udon noodles on top. Followed by a fried egg, green onions, thinly sliced seaweed and some jot sauce. Umai!
