Sorry for the MASSIVE DOWNER. This is one that nobody likes to hear, but it's true. Before your bread has rested up and cooled, it'll still be quite doughy when you eat it. If you can resist it, let your loaf cool fully before tucking in. It's SO worth the wait, and only then will it show you what it's truly made of!

I agree, that's the hardest thing to do - letting it rest! Sometimes I do and sometimes it's too hard to resist. Thanks for the tip, Jack. :)

as much as hot bread smells lush...warm/cool /cold bread ALWAYS has a better flavour..

If Jack says 'do it' then do it. If he says 'do not do it' then bugger off. I know 'cause I followed his sour dough starter recipe and now I have starter that'd make Jack envious.

I agree totally. The bread is also more difficult to slice. If I've baked a particularly light and airy loaf, I'll sometimes leave it overnight then it's much easier to slice and bag for the freezer.I'm the only one eating it so I can defrost a slice when I need it.

I make a small roll next to the loaf so I can tuck into it straight away while the loaf rests.

thx dude that was really helpful, before i watch this video i only rest my bread for few a mins and they were all kinda sticky but now that i learn i should rest my bread, bread tastes great and not soggy.
