Consider the matter is made mostly of empty space; if the nucleus is the size of a paintball, the electron is orbiting a football field away.
Neutrino don't interact with anything, don't collapse the electron wave function, the probabilities of hitting the nucleus of an atom are so remote; this is why we detect one or two neutrinos every day.
One aspect of neutrinos and their lack of interaction with the matter, is the fact they carry out a great amount of energy from the core of stars; without the neutrinos flow, stars' cores couldn't condense under the effect of gravity...
