Opening doors give you two things. 1 additonal space, because iron nodes/chests respawn on a timer. It also gives you the PERKS when you first open the door. They aren't always amazing, but they are still useful, and that's the benefits to opening a door vs saving for items.

You should be grabbing the souls whenever they appear. It GIVES you a few souls whenever you grab it, and that's your main source of DPS. Even if you can only grab like one thing from it, it's really not worth just waiting, as it's still another 3+ souls for you to purchase something. Seeing you leave it on the floor for a while hurts my heart.

I would say it's probably not worth it to hold off on selling items once you reach the next tier. 1) only the new tier of anvils spawn so you won't be getting anymore old tier stuff unless you left another laying around. And 2) you are saving gambling on saving 5 iron going Brown to Green that might not even happen when you have a similar chance to save 10 iron from going Green to Blue and even more upon higher levels.

Probably better to just immediately sell your items to get higher level items faster.
