Saturday night and I just made a double batch of the soup. My friend is sick with Covid and I told her I have just the answer. Taco soup. I sent her a picture of how she needed to arrange her soup. I drove over to her house with a hot large soup and all the fixings. I set it on her front porch and got back into my car and raced home to eat my own soup. My husband’s only comment is, “make a triple batch next time”! Everything is gone and it was fabulously delicious!

I have been making this soup a couple times a month for 2 years. It is excellent! The only thing I add is to use the whole quart of beef broth, and I take the broth and put in the cream cheese and use my stick blender before I add to soup. I tried just putting the cream cheese in the soup, but it left little pieces like cottage cheese. Good stuff!

I substituted the meat for black beans, and used light sour cream instead of cream cheese (only for the sake of calories on my part).. and it turned out absolutely delicious😋 Wrote this recipe down and it definitely will be a new favorite.
