Hi guys, welcome to Marks Home Kitchen where I do family friendly recipes that everyone can enjoy. Todays video is for a traditional Irish potato dish called champ. Champ is traditionally made with 4 ingredients potato, scallions, milk and butter(well 6 if you include salt and pepper) and hails originally from the North of Ireland. Moving down to County Kerry it is one of my favourite dishes to go along with traditional bacon and cabbage or just on its own with a load of butter on top. Its also great with sausages and gravy. This is probably one of the simplest (but tastiest) dishes that you can make.
INGREDIENTS
1.5LB (700g) good boiling potatoes (such as ) peeled and cubed
1 heaped tablespoon butter plus extra to serve
125mls milk(1/2 cup)
2 large scallions/spring onions chopped
Salt and pepper to taste.
METHOD
Steam the potatoes (its usually boil them but i think steaming gives a nicer texture for mashing) for 20-25 minutes until soft
Add the milk and scallions to a pan and bring to a boil. Turn down to a simmer, season with salt and pepper and let infuse for about 10 minutes
Remove the potatoes from the steamer and add to a pan. Add the butter and mash the potatoes until there is no lumps left.
Add the hot milk and scallion mixture and stir round with a spoon(don't mash now as you don't want to break up the scallions)
Serve the champ with extra butter
