GEORGIAN LOBIO - Homemade soup
Ingredients:
beans - 500 g
water 2L
vegetable oil - 50 g
onions 200 g
thyme sprig garlic - 50 g
tomato paste - 100 g
salt dried basil - 1 tbsp
ground coriander - 1 tbsp
utskho-suneli - 1 tbsp
chili pepper fresh cilantro - 20 g
celery leaf - 10 g
basil -10 g
dill - 10 g
Method:
Soak beans in water for 8 hours. Then rinse and place in a saucepan. Pour in 2 liters of water, put on fire. Cook for about 1 hour. Separately, fry finely chopped onion with a sprig of thyme in vegetable oil. Add tomato paste and fry over medium heat for about 5-8 minutes. Grind garlic with hot pepper in a mortar. You can use a spoon of adjika instead of pepper. When the onion and tomato paste are fried, take out sprig of thyme and add garlic paste and spices. Mix everything well. Finely chop the greens separately. Using a masher, crush half of the cooked beans. Add fried vegetables with spices and chopped greens there. Then add salt to taste. The dish is ready! Enjoy!
