6:40 Hey Achara, the "redness" you're referring to is "karam podi" which literally translates to "spicy powder". Some types of dosa's have it and some don't. You had a "Plain dosa" while Jaby had a "Karam dosa" and that could be one of the reasons why he didn't enjoy dosa+sambar, karam dosa+sambar doesn't hit the same way. He should've tried your plain dosa with sambar.

And the red thing within dosa is called 'podi' which is like the spice gunpowder can be tossed with idlis too..
