Zucchini Lime Coconut Cake - So Good!

The zucchini is gone from the garden, but with the last one I made a yummy cake that has zucchini, coconut, pecans, and lime.

May I offer three suggestions?
1) Folding in the add-ins 5 or 6 stirs will yield a muffin-like texture to the cake.
2) Sprinkling a little lime zest on top of the glazed cake will give it some pretty green speckles.
3) Make sure you take a piece to Granny the Great. 😊

I've been n the south all my life, South Carolina, raised on neckbones n Lima beans cooked together, turkey necks and rice, and collards with cornbread dumplings.. but never had zucchini lime cake 😆..it looks delicious thanks for sharing

Tipper, I have my Great Grandmaws old Bundt Pan and it's heavy and in great condition. It was handed down to my Mama and when she was no longer able to cook and bake anymore, I asked her if I could have it and all her other old Baking Pans and Cast Iron Pans n Dutch Ovens! She of course said yes bc I had the biggest family and I was always Cooking, Baking, Canning and Putting Up Food! Now, I have all of her stuff plus my own stuff I'd had and from my other Grandmaw n Aunts! I have so much and their old Bowls and Casserole Dishes! I am truly Blessed to have all this stuff from my Family's past! Truly Treasures! My daughter uses it now to cook for us and her children n grandchildren. I did share a few pieces with my 2 Sister's and my 2 nieces! They're all grown now and have their own families! My Son got a couple of pieces and with all that I probably still have around 55-60 pieces! They was 4 Bundt Pans all together but I have the Oldest and Best One which leads me to this. I saw this Recipe when you first put this Video out and after I watched it, I came back, got the Recipe and my Daughter helped me make it. My neighbor had given me some Zucchini and I made some bread but saved enough to make this Cake! I can't tell you how much we enjoyed this Cake! I put everything in it even the Pecans! I took some of the Lime Zest and Sprinkled it on top of the Icing! It made the Cake even prettier with it on top! My Goodness Sweetheart, this is one of the Best Cakes I've ever tasted in my life! Thank you so much Sweet Tipper! I had to splurge to make it but, Splurge I Did! Lol. I know you shared some with Sweet Precious Granny! I know she enjoyed it Tremendously! Give you Sweet Family my Hello' s and them Babies Kisses on their Sweet Cheeks for me! I know I haven't left to many comments lately but I tend to talk alot so I tried to slow down some dear! I'm still kicking here in Blue Ridge and hanging in there! I had to tell you tho, that I made your Cake and how Tasty it is. Tell Matt that I'm with him. I like Lime to. Thank you again Dear for this Recipe! It's a Keeper just like all your other ones! I wrote them down in my Spiral Notebook that I started way back some time ago for Special Recipes! My life story runs with yours, in so far as, I bought my bundt pan in an antique mall many years ago and still use it to this day. The Northland Company made the first bundt pans in 1950, the year before I was born. They still make them, but under the Nordic name. Your cake looked so tempting. I love to make heavier cakes in my pan, with applesauce, chopped dates, raisins, nuts etc. especially during the holidays. I like that the pan makes a pretty presentation, even without a sugary topping. and just feels so homey and wholesome.
