Ingredients look good. The method shown here is not good. After cooking the chicken and chorizo remove from the fry pan. Add the onion and cook until translucent. Then add the A’borio rice and cook with the onion for a minute or two, stirring constantly. Then slowly start adding enough of the hot chicken stock bit by bit, just enough to cover the rice. Continue stirring. As the rice absorbs the stock, add more until the rice is covered again and continue to stir until the rice absorbs the stock. It should leave a line when you run a wooden spoon through it. Keep repeating this process until the rice is cooked just past Al dente. A grain of rice should still have a slight pop when you bite it. It takes time, love and care to get it right. Then turn off the heat, add the chicken and chorizo, some chopped flat leaf Italian parsley and a cup of finely grated Parmesan and stir through. Leave to sit for 5 minutes with a lid on the pan. serve. Then you are ready to serve. Garnish with a little more Parmesan and parsley.
